What goes into our meat?

Well to be honest, a lot of conversation. Mary's our pitmaster and her secret " you got to talk to the meat."

The passion that comes with years of being in the hospitality business can only be described as just that, Passion.  Why else would you get up every morning at 4:00 a.m. to start your all wood fire in your smoker. We buy only the best available meats. Yes, we pay more for it but once it hits your taste buds you will know why.

Everything on our menu is made fresh daily. We don't believe in working this hard to serve inferior meals. Our reputation is on the line and we both were raised with the motto, "If you're going to do anything you better do it right."

A Little About Our Meat 

When we First started cooking BBQ 20 plus years ago, brisket was the "unwanted" meat.  People only ground it up into their burgers.  Today, there's a whole BBQ revolution center around brisket. Most brisket you eat is made from the flat.  So it's more well done, not as juicy since it has less fat.  It typically has a bark that comes from the seasonings or rub being caramelized and cooked on at low temperatures for long hours. It's not uncommon for brisket to cook 12 plus hours. We however use the whole brisket because we like it moist and we believe fat equals flavor. Our brisket will have a smoke ring which comes from our all wood fire. We have baby back ribs, pulled pork, and smoked turkey breast. We also have Baked beans, mac and cheese, coleslaw and potato salad. The sweetest ending is our homemade donut bacon bread pudding that is also done on the smoker.
